Ayurvedic Cuisine: Peanut Date Tart

In European Ayurveda®, it's all about being in balance in all areas of life. For this reason, there are no culinary prohibitions. The ayurvedic diet is customized to your constitution, that is, the composition of the doshas and your overall health condition. You enjoy dishes that nourish and maintain the health of your body, while also tasting good and pampering your senses.

Ingredients

Base

  • 375 g cashew nuts

  • 225 g dates

  • 3 tbsp coconut oil

Filling

  • 700 g peanut butter

  • 450 g dates

  • 120 g coconut oil

Glaze

  • 270 g chocolate

  • 3 tbsp coconut oil

  • Optional: seasonal berries

Preparation

For the base, gently warm the cashew nuts with the dates and coconut oil, and puree in a blender. Pour the mixture into a cake tin and let it cool.

For the filling, briefly heat the dates in boiling water and puree in a blender with the coconut oil, dates, and peanut butter. Pour onto the cooled base mixture and let cool again.

For the glaze, melt the chocolate and mix with the coconut oil. Pour over the cake and let it cool. Cut when cold, decorate with seasonal berries, and enjoy!

The ingredient quantities are for one tart. It keeps in the refrigerator for several days and can be consumed piece by piece.
